Recipe Ingredients

2 1/2 Cups organic unbleached flour
1 Cup brown sugar
2 teaspoons cinnamon
3 tablespoons molasses
1/4 Cup fresh ginger juice. If you don't have a juicer, use 3 teaspoons freshly grated ginger & 1/4 Cup water.
1/2 Cup Smart Balance buttery spread, melted.
1 1/2 teaspoons vanilla extract

Recipe Steps

Mix all ingredients thoroughly, adding vanilla extract near the end to maintain flavor.

Spoon 20 balls of the batter onto baking pan. Silpats are your best friends for this.

Sprinkle with cinnamon and flatten slightly with a spatula.

Bake for 16 minutes at 350 degrees.

Let them cool and enjoy!
