Recipe Ingredients

4 chicken cutlets, thinly sliced
salt and fresh pepper, to taste
1/2 cup plain breadcrumbs
3 tbsp grated Asiago cheese
3 tbsp Smart Balance® Omega Plus™ Light Mayonnaise Dressing
1/4 cup Smart Balance® Cooking Oil
lemon wedges for serving

Recipe Steps

Lightly season cutlets with salt and pepper. Combine bread crumbs and Asiago cheese in a medium bowl. In another bowl, mix Smart Balance® Omega Plus™ Light Mayonnaise Dressing and 1 tablespoon of water to thin slightly.

Dip the chicken cutlets in mayonnaise, then breadcrumb mixture, shaking off excess.

Heat a large nonstick frying pan on medium heat. When hot, add the Smart Balance® Cooking Oil. Next, add the chicken and cook a few minutes on each side, until golden brown and cooked through. Serve with lemon wedges.
