Recipe Ingredients

2 tbsp Smart Balance® Blended Butter Sticks, room temperature
4 cloves garlic, minced
2 lb live mussels, washed and debearded
1/3 cup white wine
1/4 cup fresh parsley, minced
salt and pepper, to taste

Optional for serving:
Sliced whole wheat French baguette for serving

Recipe Steps

In a large pot, melt the Smart Balance® Blended Butter Sticks over medium-low heat. Add the garlic and sauté until golden. Add the white wine and cook 3 to 4 minutes.

Add the mussels and half of the parsley; give everything a good toss, increase the heat to medium-high and cover the pot.

Cook for about 10 minutes, or until the mussels open. Stir occasionally so that all the mussels are in contact with the heat. Season with salt and pepper. Sprinkle with the parsley and serve immediately.
