A little glaze can transform your carrots from a salad staple to a celebrated side dish. Our version uses chicken or vegetable broth and takes just 30 minutes to prepare.

Recipe Ingredients

2 tbsp Smart Balance® Buttery Spread
1 1/4 lb fresh carrots, peeled, tops trimmed leaving 1 inch
kosher salt and freshly ground pepper, to taste
1/2 cup low-sodium chicken broth or vegetable broth
1 tbsp raw sugar
1 tbsp chopped fresh parsley

Recipe Steps

Over medium heat, melt the butter in a large sauté pan. Add the carrots and stir to coat with the butter. Season with salt and pepper. Add the broth, increase the heat to medium-high and bring to a simmer. Partially cover the pan and simmer until the carrots are just tender, 8 to 10 minutes.

Uncover the pan and add the sugar, stirring well to combine. Continue to simmer, uncovered, stirring occasionally, until the liquid has evaporated and the carrots are glazed, 5 to 6 minutes more. Transfer to a serving bowl and top with fresh herbs.
