Recipe Ingredients

15-ounce can black beans, rinsed and drained
1 cup finely chopped green or red bell pepper
3 tablespoons lime juice
2 tablespoons Smart Balance® Omega Oil
1/4 cup chopped cilantro
1 medium garlic clove, minced
1/2 cup reduced fat mozzarella cheese, grated 2 medium tomatoes, sliced

Recipe Steps

Combine the beans, pepper, lime juice, Smart Balance® Omega Oil, cilantro, garlic and 1/4 teaspoon salt in a medium bowl. Gently stir in the mozzarella cheese.

Arrange the tomatoes on four dinner plates. Spoon equal amounts of the bean mixture over the tomatoes.
