Recipe Ingredients
1 onion, diced
2 green peppers, diced
6 celery stalks, diced
2 tbsp Smart Balance Omega Oil
½ tsp salt
½ tsp pepper
1 tbsp chopped garlic
12 oz light beer
24 oz salsa verde
32 oz fat free reduced sodium chicken broth
3- 15 oz cans cannellini beans
4 cooked chicken breasts, diced or shredded
½ cup fresh lime juice
½ cup fresh cilantro
Recipe Steps
In a large soup pot, add the onion, green pepper, celery, Smart Balance Omega Oil, salt, pepper and cook over medium high heat for about 10 minutes. Add the garlic and cook for 2 minutes.
Add the beer, salsa verde, chicken broth, beans and chicken. Continue to cook at a slow boil for about an hour.
Add the lime juice and cilantro and serve.
