Smart Balance® Omega Non-Stick Cooking Spray
1 1/4 cups unbleached all-purpose flour
3/4 cup brown sugar
1 tsp baking soda
2 1/2 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 tsp salt
1/4 cup Smart Balance® Cooking oil
1 large egg
1 1/4 cups canned pumpkin puree
1 tsp vanilla extract
Preheat oven to 350°. Line a minicupcake tin with liners and spray with Smart Balance® Omega Non-Stick Cooking Spray.
In a medium bowl, combine flour, brown sugar, baking soda, pumpkin spice, cinnamon and salt with a wire whisk. Set aside.
In a large bowl, mix Smart Balance® Cooking oil, egg, pumpkin puree and vanilla. Beat at medium speed until thick. Scrape down sides of the bowl.
Add the flour mixture, then blend at low speed until just combined. Do not overmix.
Pour batter into prepared muffin tin and bake on the center rack for 15 minutes, or until a toothpick inserted in the center comes out clean.
Let the muffins cool at least 20 minutes before eating.
Makes 30 servings. (1 muffin per serving)
