Our fresh take on a French clafoutis features plump raspberries, agave nectar and vanilla for a sweet but sensible baked treat.

Recipe Ingredients

1 cup Smart Balance® Fat Free Milk and Calcium
1/2 cup agave nectar (or honey)
3 large eggs
1 tbsp vanilla
pinch of salt
1/2 cup unbleached flour
Smart Balance® Non-Stick Cooking Spray – Original
2 cups raspberries
2 tbsp raw sugar
powdered sugar, for garnish

Recipe Steps

Preheat oven to 350°F.

Using a blender, combine the milk, agave, eggs, vanilla, salt and flour, and blend.

Lightly spray a large baking dish and dust with a little flour. Place the raspberries in the dish and pour the batter over the berries. Sprinkle the raw sugar on top.

Bake for 45 - 50 minutes or until lightly browned and a toothpick inserted into the center comes out clean. When you pull it put of the oven it will wiggle a bit which is completely normal.

Let cool and sprinkle with powdered sugar.
