Early spring is artichoke season! And since you can make our dipping sauce ahead of time, you’ll be ready right on schedule.

This recipe was originally created as part of our Spring For Flavor recipe feature.

Recipe Ingredients

Lemon Dipping Sauce:
1/2 cup Smart Balance® Light Mayonnaise Dressing
2 tsp lemon juice
1/2 tsp Worcestershire sauce
1 tsp minced parsley
1/2 tsp minced garlic
pinch lemon zest (garnish)

 

For the artichokes:
2 medium-size artichokes
1 bay leaf
1 garlic clove, peeled and smashed
water, for steaming

Recipe Steps

Combine all the dipping sauce ingredients together in a bowl and keep chilled until ready to use.

Trim bottom stem of artichokes, leaving about 1 inch. Cut the first couple of inches off the top of the artichoke and trim the tips of any spiky leaves with scissors. Rinse the artichokes well, under running water.

Put about 2 inches of water in the bottom of a big pot, and place the artichokes top down. Throw in the bay leaf and crushed garlic clove. Cover and bring to a boil, then lower the heat so liquid is just simmering. Steam for about 30-45 minutes.
