1 whole wheat baguette
Smart Balance Omega Non-Stick Cooking Spray
1 15.5 oz can cannellini beans, rinsed
8 oz frozen peas, thawed
1 tsp salt
1 tsp pepper
1 tsp onion powder
Zest of 1 lemon
Juice of 1 lemon
¼ cup of mint leaves
2 tbsp Smart Balance Omega Oil
Heat the oven to 400 degrees. Slice the baguette into ¼ inch slices.
Spray the baguette slices with the cooking spray and toast in oven about 10 minutes until crisp. Let cool.
Meanwhile, add the remaining ingredients to a food processor and mix until smooth. Be sure to scrape down the sides halfway through.
Serve the pea mixture on top of the crostini. You can garnish with shredded cheese, peas, or mint leaves if desired.
