15 oz can northern beans, drained and rinsed
1 clove garlic
2 tbsp fresh lemon juice
1/4 cup Smart Balance® Cooking Oil
1/4 cup fresh Italian parsley leaves (loosely packed)
salt and freshly ground black pepper, to taste
raw baby carrot sticks, bell peppers and cucumbers for serving
Place the beans, garlic, lemon juice, Smart Balance® Cooking Oil and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped.
Season with salt and pepper to taste.
Transfer the bean puree to a small bowl.
Serve with crudités or pita chips.
