1 tbsp Smart Balance® Original Buttery Spread
1 tbsp Smart Balance® Cooking Oil
1/4 cup onion, diced
1 jalapeño chile, diced
1 (15-ounce) can black beans, rinsed and drained
1/4 cup low-sodium chicken broth (or vegetable)
salt and freshly ground black pepper
queso fresco and diced scallions
Melt the buttery spread with the oil in a saucepan over medium-high heat.
Add the onion and jalapeño and cook until golden, about 3 minutes.
Add the beans and chicken broth. Cook over medium heat, frequently mashing halfway through, until the beans thicken, about 10 minutes.
Season with salt and pepper and serve.
