Break out the slow cooker and make Taco Night an easy night. Succulent shredded chicken and a homemade slaw bring these skinny tortillas to life.

Recipe Ingredients

For the Filling:
3 (1 1/2 lbs) skinless chicken breast
salt and black pepper, to taste
10 oz can mild or spicy diced tomatoes with chile


For the Slaw:

3/4 cup shredded white cabbage
3/4 cup shredded carrots
2 tbsp Smart Balance® Cooking Oil
1 tbsp lime juice, or more to taste
salt and black pepper, to taste


For the Taco:

12 yellow corn tortillas
1 medium avocado, diced

Recipe Steps

Season chicken with salt and pepper and place in the bottom of the slow cooker. Cover with diced tomatoes, cover and cook HIGH 2 hours.

In a medium bowl combine shredded cabbage and carrots with oil and lime juice; season with salt and pepper.

Remove chicken from the slow cooker and shred with two forks.

To serve, warm the tortillas. Top each with 1/4 cup shredded chicken, cabbage/carrot slaw and diced avocado on top.
