Bring your rice dishes to life! Lime, cilantro and scallions perk up white rice for a fluffy, flavorful bed for your favorite dishes or as a tasty side all by itself.
1 cup white basmati rice
2 cups water
1 1/2 tbsp Smart Balance® Cooking Oil
1 tsp kosher salt
1/2 lime, juice of
2 tbsp fresh chopped cilantro
2 tbsp fresh chopped scallions
In a small heavy pot with a fitted lid, combine rice, water, 1 tablespoon of the oil and salt, and bring to a boil.
When the water reduces and barely skims the top of the rice, reduce the heat to low and cover the pot; cook about 15 minutes.
Remove from heat but keep covered 5 more minutes.
Fluff with a fork and toss with remaining oil, lime juice, cilantro and scallions.
