Recipe Ingredients

Salsa:
1 large ripe mango, peeled and diced
2 tbsp chopped fresh cilantro
1 tbsp minced red onion
1 tbsp red bell pepper
1 tbsp minced jalapeño, seeds removed and diced
2 tbsp fresh lime juice


Scallops:
2 tbsp Smart Balance® Non-GMO Buttery Spread
12 sea scallops, cleaned
kosher salt and black pepper
2 cups baby arugula

Recipe Steps

Combine the salsa ingredients and set aside. Season the scallops with salt and pepper. In a large skillet, heat butter over medium heat. Cook scallops until browned on one side, 2 to 3 minutes. Next, flip scallops and cook until opaque throughout—about 60 seconds more, while their centers are still slightly translucent. Serve on a platter with mango salsa.

Makes 6 servings
Serving Size: 2 scallops with 1/3 cup salsa
Time: 15 to 18 minutes
