A Healthier, Heartier Chili—With a Side of Revelation

Before I launch into what went wrong during this week’s cooking endeavor and the numerous lessons I learned, I’ll go right ahead and spoil the ending by saying upfront that my chili was darn good!...

Perfect for company! Makes great leftovers too!

Recipe Ingredients

3 lbs of lean ground beef (93%)
5 tbsp Worcestershire sauce, divided
2 tsp salt
2 ½ tsp pepper, divided
1 ½ tsp garlic powder, divided
1 ½ tsp onion powder, divided
2 grade A large eggs- whites only
Smart Balance Omega Non Stick Spray
1 onion, sliced into thick rings
1 cup dry white wine
2 12 oz jars of low fat beef gravy
2 tbsp ketchup

Recipe Steps

In a large mixing bowl, add the ground beef, 3 tbsp Worcestershire, salt, 2 tsp pepper, 1 tsp garlic powder, 1 tsp onion powder and egg whites. Mix until well combined and shape into 12 oval patties.

Preheat the oven to 400 degrees.

Spray a skillet with non stick spray and brown each patty on both sides over medium high heat. You will just be browning the meat and not cooking it all the way through. Keep the skillet on the stove, you will use again for the sauce.

Arrange all of the browned patties in a baking dish and place the onion rings on top.

In another mixing bowl, add the wine, gravy, ketchup, 2 tsp Worcestershire, ½ tsp pepper, ½ tsp garlic powder and ½ tsp onion powder. Pour the sauce into the skillet and heat until just bubbly, scraping the bits from the bottom of the pan.

Pour the sauce evenly over the patties and bake uncovered for 30 minutes.
