Sugar cookies baking in the oven has always been a holiday favorite. A pinch of lemon extract in the batter was my mothers little secret.
* 4 cups all-purpose flour
* 1 1/2 cup (3 sticks) or equivalent smart balance, softened
* 1 cup of sugar
* 1 large egg
* 2 1/2 teaspoons lemon extract-any brand
* 1 teaspoons vanilla extract-any brand
* Pinch salt if using salted butter if not 1/4 teaspoon salt to be added
* Decorative icing and/or candy your choice
Beat butter and sugar in a large bowl until fluffy. Beat in egg, lemon and vanilla extracts, and salt. With a mixer on low speed, beat in flour in 2 additions until blended. Divide dough into thirds; shape each into a disk and wrap in plastic wrap. Refrigerate until firm enough to roll, about 2 hours.
Bake 8-10 minutes
Makes 6 dozen cookies (1 cookie per serving).
