Everyone loves corn in the summer. So fire up the grill—but first, break out the Smart Balance® Blended Butter Sticks. Topped with chilli powder and crumbled feta, somehow corn never tasted sweeter.


Recipe Ingredients

4 ears corn, husks and silk removed, stalks left intact
1 tbsp Smart Balance® Blended Butter Sticks, melted
1/4 cup Smart Balance® Light Mayonnaise Dressing
1 tbsp minced cilantro, plus more for garnish
1 tsp Mexican chili powder
2 tsp lime juice, plus 4 small wedges for serving
3/4 ounce crumbled queso fresco or feta cheese

Recipe Steps

Grill corn on a grill or grill pan on medium heat for about 8 to 10 minutes on each side brushing with melted butter during the last few minutes of cooking.

Meanwhile combine mayonnaise, cilantro, chili powder and lime juice in a bowl.

When the corn is cooked, brush it with the mayonnaise mixture then sprinkle with cheese and cilantro and serve with lime wedges.
