For the lobster salad:
1 1/2 tbsp Smart Balance® Light Mayonnaise Dressing
1 tbsp chopped celery
1/2 tbsp chopped red onion
1/2 tsp Dijon mustard
pinch of black pepper
2 1/2 oz steamed lobster tail meat (from a 5-oz tail)
For the sandwich:
1/4 cup shredded lettuce
1 whole wheat hot dog bun
Combine Smart Balance® Light Mayonnaise Dressing with celery, red onion, mustard and black pepper.
Chop lobster meat up into small chunks. Add to Smart Balance® Light Mayonnaise Dressing mixture and mix well.
Place shredded lettuce on bun and top with lobster meat.
