Sometimes the best dishes are the simplest. This al dente pasta recipe is full of buttery flavor and accented with peas, bacon and Romano cheese.
8 oz linguini
2 tbsp Smart Balance® Butter and Canola Oil Blend
2 tbsp Smart Balance® Cooking Oil
2 cloves garlic, chopped
1 cup of fresh or frozen peas, thawed
salt and ground pepper
1/4 cup pecorino Romano, grated
3 slices center-cut bacon, cooked and crumbled
Set a large pot of salted water to boil.
In a large pan, heat butter and oil over medium heat; add garlic, stir occasionally until they begin to soften, 1 to 2 minutes. Add peas; season with salt and pepper and cook about 2 minutes.
In the meantime, cook pasta in boiling water until al dente, according to package instructions.
Reserve 1 cup pasta water; drain pasta, and add to the pan with peas. Toss well and add some reserved pasta water a little at a time to coat, and pecorino Romano. Toss with bacon pieces and serve.
