Recipe Ingredients

Crust:
4 tbsp Smart Balance® Original Light Buttery Spread
3 tbsp white granulated sugar
1 ½ cups graham cracker crumbs

Filling:
¾ cup white granulated sugar
1 ½ cup water
1/3 cup cornstarch
1 large egg yolk
2 lemons, juiced and strained
zest from 1 lemon

Meringue Topping:
3 large egg whites
3 tbsp white granulated sugar
1/2 tsp vanilla extract

Recipe Steps

Crust:
Preheat oven to 400°F. Prepare crust first by placing crust ingredients into a microwave-safe bowl. Heat for 40 seconds or until Smart Balance® Original Light Buttery Spread has melted. Mix well. Pour crumbs into a 9-inch pie dish, and press until completely flattened throughout bottom and sides of dish. Bake for 10 minutes. Remove from oven and set aside while you prepare the filling.

Filling:
Reduce oven to 350°F.

In a saucepan over medium heat, combine sugar and water. Gradually add the cornstarch and whisk continuously, until the mixture comes to a boil, is smooth and has thickened. Remove saucepan from heat.

In a bowl, add egg yolk and gradually whisk in a small amount of the warm filling. Once combined, return the mixture to the saucepan. Whisk and continue to cook over medium heat for another minute. Remove from heat and whisk in the strained lemon juice and zest.

Meringue Topping:
In a separate bowl using an electric mixer, beat the egg whites for 1 minute. Gradually add the sugar and continue to beat for another 2 minutes. Add vanilla extract and beat until egg whites form stiff peaks.

Fill piecrust with the filling. Spread the meringue topping completely over the filling. Bake at 350°F for 15 minutes or until the meringue topping is golden brown. Remove from oven and allow to cool completely before serving.
