1 tbsp Smart Balance® Buttery Spread Original
1 (16 oz) multigrain or regular French baguette
4 large eggs
1 tsp vanilla
1/4 tsp cinnamon
1 1/2 cups Smart Balance® Fat Free Milk and Omega-3s
1 Ib frozen strawberries, thawed
1/2 cup frozen blueberries, thawed
1/4 cup sugar
Place Smart Balance® Buttery Spread in a 2-quart casserole dish and microwave briefly, until softened enough to spread over bottom of dish.
Cut ends off baguette and discard ends. Cut baguette into 12 (1 1/2-inch thick) slices. Fit slices, cut side up, into dish. Set aside.
Beat eggs in a mixing bowl. Mix in vanilla, cinnamon and Smart Balance™ Fat Free Milk and Omega-3s. Pour mixture over bread slices in dish. Cover and let stand at least 1 hour, or refrigerate overnight. If needed, turn slices halfway through soaking time.
Bake, uncovered, at 350° for 45 minutes or until bread is lightly browned.
Meanwhile, prepare berry sauce. Combine all sauce ingredients in a 2-quart saucepan. Cook, uncovered, over medium-low heat, breaking up berries as they cook for 1 hour or until sauce is thick and cooks down to about 1 1/2 cups.
Serve French toast with berry sauce.
