A lightened up version that won't weigh you down!
1/2 cup sugar
4 egg yolks
2 cups Smart Balance Low Fat Milk
¼ tsp cinnamon
¼ tsp nutmeg
¼ tsp cloves
1 tsp vanilla
2 oz rum, brandy or whiskey (optional)
In a medium saucepan, add the sugar and egg yolks. Whisk over medium low heat until the sugar is melted and the mixture is glossy and pale yellow.
Whisk in the milk, and then add the cinnamon, nutmeg and cloves. Continue stirring over medium heat just until the edges begin to bubble. Do not boil.
Remove from heat and stir in the vanilla.
Chill in the refrigerator completely, and then add the alcohol, if using. Serve with additional cinnamon, nutmeg and cloves sprinkled on top, if desired.
