Won't weigh you down like a traditional Alfredo!
1 box of whole wheat linguine
2 tbsp Smart Balance Omega-3 Buttery Sticks
2 tbsp flour
½ cup chicken stock
½ cup dry white wine
½ cup evaporated milk
¼ cup shredded asiago cheese
¼ cup romano cheese
1 tsp garlic powder
1/4 tsp nutmeg
½ tsp salt
1 tsp pepper
12 oz frozen broccoli florets, thawed
Prepare a box of linguine according to the directions on the box, minus 1 minute, saving a ½ cup of pasta water.
Meanwhile, in a large pan add the butter and melt over medium high heat. Whisk in the flour and cook for a minute.
Slowly whisk in the chicken stock and cook for another minute. Then whisk in the wine and cook for another minute.
Reduce the heat to medium, and add the rest of the ingredients, stirring well.
Once the linguine is ready, add it to the pan along with the pasta water. Toss until well combined and cook for another 3-5 minutes until the sauce coats the pasta.
Makes 8 servings.
