2 Smart Balance® Blended Butter Sticks, softened
1 1/3 cup sugar
2 1/2 tsp vanilla extract
1 large egg
2 1/2 cups cake flour
1/4 cup cornstarch
3/4 tsp baking soda
1/4 tsp salt
1/2 cup red & green sprinkles (long, thin sprinkles)
Preheat the oven to 375ºF.
In a stand mixer, cream the butter and sugar for about 4 to 5 minutes. Add the vanilla and egg. Beat until well combined.
In a separate bowl, sift in the flour, cornstarch, baking soda and salt. Slowly add the flour mixture, a little at a time to the butter/sugar mixture, and continue on low speed until it’s all added and combined. Gently mix in the sprinkles until just combined, careful not to overmix or the sprinkles will start to bleed into the dough.
Scoop cookie dough onto cookie sheets, about 1 heaping tablespoon each, 1-1/2 inches apart on cookie sheets.
Bake about 10 to 12 minutes, until they just start to turn light golden brown on the edges only. Don’t let them become too golden or they’ll be too crisp.
Cool on a wire rack.
