4.5 oz canned salt free chicken breast, drained
2 tbsp diced celery
1 tbsp red onion, minced
2 tbsp Smart Balance® Omega Plus™ Light Mayonnaise Dressing
1 tbsp Smart Balance® Light Butter & Canola Oil Blend
4 slices light whole wheat bread
2 slices Fat Free Swiss cheese
Combine chicken breast, celery, onion and mayonnaise in a medium bowl.
Heat a large skillet over low heat. Spread 1/2 tbsp butter over each slice of bread and place 2 slices of bread, butter side down on the skillet. Top each slice with chicken salad, then cheese and top both with a second slice of bread, butter side up. Cook on low heat until cheese melts and bread gets golden brown; flip and cook on the other side until golden. Serve immediately.
