Recipe Ingredients

1 1/2 cups chopped carrots
2 cups crushed rice, corn, or bran cereal
2 eggs, beaten
1/4 cup finely chopped celery
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon pepper
2 tablespoons cooking oil

Recipe Steps

Place diced carrots in a saucepan with an inch of water.

Bring to a boil; reduce heat to a simmer. Cover and steam carrots for 8 minutes or until tender.

Drain carrots.

In a bowl, combine softened carrots, cereal, eggs, celery, onion, salt, sugar and pepper; mix well.

Form into six patties.

Heat oil in a skillet over medium heat; cook patties for 3 minutes on each side or until browned.

Serve on buns if desired.
