Smart Balance® Non-Stick Cooking Spray - Original
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup granulated sugar
2 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
1/4 cup Smart Balance® Blended Butter Sticks, melted
2 large eggs
1 1/2 tsp vanilla
2 cups grated carrots, peeled
10 oz canned crushed pineapple in juice, drained
1/2 cup raisins
Preheat oven to 325°. Spray a 9x5 inch loaf pan with Smart Balance® Non-Stick Cooking Spray – Original.
In a large bowl, combine flour, sugar, baking soda, salt, and cinnamon; stir well with a whisk.
In a medium bowl, combine melted Smart Balance® Blended Butter Sticks, eggs, and vanilla; stir well. Add grated carrots and pineapple; mix well. Fold wet ingredients with the dry ingredients. The batter will be stiff and dry initially. Continue folding to bring it all together. Fold in raisins.
Spoon batter into the loaf pan. Bake at 325° for about 55-60 minutes, or until a wooden toothpick inserted in the center comes out clean.
Cool before serving.
Makes 12 servings.
