Recipe Ingredients
1- 15 oz can of black beans, rinsed and drained
1 shot of espresso
3 eggs
2/3 cup of dark cocoa powder
½ cup sugar
1 cup dark brown sugar
½ cup whole wheat flour
1 tbsp Smart Balance® Cooking Oil
2 tsp vanilla
½ cup semi sweet chocolate chips
Recipe Steps
Preheat the oven to 325. Spray an 8x8 pan with cooking spray.
In a food processor, process the black beans and espresso until smooth, scraping down the sides.
Add the eggs, cocoa powder, sugars, flour, oil and vanilla. Process again until well combined.
Stir in the chocolate chips and pour the batter into the prepared pan.
Bake for 35 minutes until set in the center.
