2 ounces whole wheat or multigrain French bread, cut into 1/2 inch cubes
8 ounces mixed greens
13.75-ounce can quartered artichoke hearts, drained
1 medium red bell pepper, thinly sliced
1/2 cup thinly sliced red onion
1/4 cup Oregano-Balsamic Salad Dressing*
2 ounces (1/2 cup) reduced fat feta, crumbled
Place the bread cubes on a baking sheet in a single layer. Place in oven. Turn oven on and set the temperature to 350 degrees F. Do not preheat oven. Bake 10 minutes or until slightly firm and beginning to lightly brown on bottom. Remove from heat and set aside.
Combine the mixed greens, artichoke hearts, bell pepper and onion in a salad bowl. Add the dressing and toss gently, yet thoroughly to coat. Add the bread cubes and feta, toss gently.
Makes about 11 cups total. Serves 8; about 1 1/3 cups salad per serving.
