Quick, healthy, and delicious almond butter cookies.
1/2 c. Smart Balance light buttery spread
1/2 c. almond butter
1 c. brown sugar
1 1/4 c. unbleached whole wheat flour
1/2 t. baking soda
1/8 t. salt
1/2 t. baking powder
1/2 t. almond extract
Cream butter and almond butter with a mixer for about 2 minutes.
Add sugar and extract. Mix about 1 minute.
Add egg and dry ingredients. Mix 2-3 minutes.
Use a tablespoon to drop dough on a cookie sheet.
Flatten with a fork which has been dipped in flour, and make a crisscross on top of each cookie.
Bake at 350 for 15 minutes.
Let cool 10-15 minutes. Enjoy.
