This skillet recipe sizzles with authentic New Orleans flavor! Thyme, peppers, onions and, of course, a little Cajun seasoning all heat up this spicy shrimp dish.
2 tbsp Smart Balance® Light Buttery Spread
1 cup uncooked long grain rice
1/3 cup frozen peas
1 1/2 cups reduced sodium chicken broth
1 lb peeled medium raw shrimp
1 1/2 tsp Cajun seasoning, or more to taste
2 tbsp Smart Balance® Cooking Oil
1/4 cup chopped onion
1/2 cup diced red bell pepper
1 tsp fresh thyme
In a medium heavy skillet, melt the Smart Balance® Light Buttery Spread. Add the rice and sauté about 1 minute.
Add chicken broth first, and then add peas, and bring to a boil.
Cover and cook on low heat for about 18 minutes.
Remove from heat and keep covered 10 more minutes.
Season shrimp with Cajun seasoning. In a large skillet, heat 1 tablespoon of Smart Balance® Cooking Oil over medium heat. When the skillet is hot, add the shrimp and cook about 2 to 3 minutes, or until opaque and pink.
Remove shrimp from skillet and set aside. Add remaining 1 tablespoon of oil to the skillet and add the onion and bell pepper. Sauté until soft, then add the cooked rice. A
dd the cooked shrimp and fresh thyme, and sauté another minute.
