3 ripe medium bananas
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
3/4 tsp baking soda
1/4 tsp salt
3 tbsp Smart Balance® Blended Butter Sticks, softened
1/2 cup dark brown sugar
2 large egg whites
1 tsp vanilla extract
2/3 cup Smart Balance® Natural Dark Chocolate Chunky Peanut Butter Spread
Preheat oven to 325°F. Spray a loaf pan with cooking spray.
Mash bananas in a bowl, set aside.
In a medium bowl, combine flour, cocoa powder, baking soda and salt with a wire whisk. Set aside.
In a large bowl, cream butter and brown sugar with an electric mixer. Add the egg whites, mashed bananas, vanilla and chocolate peanut butter; beat at medium speed until thick. Scrape down sides of the bowl.
Add flour mixture, then blend at low speed until combined. Do not overmix.
Pour batter into the prepared loaf pan. Bake on the center rack for 1 hour, 5 minutes or until a toothpick inserted in the center comes out clean.
