14 oz loaf whole wheat baguette or Italian bread, sliced diagonally into 12 slices
Smart Balance® Non-Stick Cooking Spray – Original
6 plum tomatoes, diced
1/4 cup red onion, diced
1/4 cup Smart Balance® Cooking Oil
2 garlic cloves, minced
2 tbsp chopped fresh basil
1 tsp balsamic vinegar
salt and pepper, to taste
Heat the grill or a grill pan over high heat. Spray bread lightly on both sides, then grill over high heat to mark both sides of the bread being careful not to burn.
Meanwhile mix tomatoes, red onion, oil, garlic and basil in a large bowl with the balsamic vinegar, salt and pepper.
Top each slice of toasted bread with the tomatoes and serve on a platter.
