Skinny chicken, big taste! Enjoy these golden brown chicken cutlets without the guilt.
6 thin chicken cutlets
kosher salt and black pepper
1/4 cup unbleached flour
3 large egg whites, beaten
1/2 cup bread crumbs
1/4 cup grated Parmesan cheese, divided
3 tbsp Smart Balance® Cooking Oil
20 oz marinara sauce, homemade or jarred, reduced sodium
3/4 cup shredded part-skim mozzarella cheese
Heat oven to 400º F. Season the chicken with salt and pepper.
Place the flour and egg whites in separate shallow bowls. In a third shallow bowl, combine the bread crumbs and 2 tbsp of Parmesan. Coat the chicken with the flour, then dip in the egg whites, then coat with the bread crumb mixture.
Heat the oil in a large skillet over medium-high heat. Cook the chicken in batches until golden brown, about 2 minutes per side.
Pour the marinara sauce in a large baking dish. Top with the chicken, grated parmesan and mozzarella.
Bake until bubbling and golden brown, 20 to 25 minutes.
