Nothing warms you up like a bowl full of chili. Chili powder cumin and cayenne paper give this bowl an extra kick.
1 tbsp Smart Balance® Cooking Oil
1 lb 95% lean ground beef
3/4 cup onion, chopped
(2) 10 oz cans diced tomatoes, with chilies
2 (8 oz) cans tomato sauce, low sodium
15 oz can salt-free chickpeas, drained
15 oz can salt-free black beans, drained
15 oz can salt-free kidney beans, drained
1 tbsp chili powder
1 tsp cumin
1/2 tsp cayenne pepper
salt, to taste
green onion, chopped
reduced-fat shredded cheddar
reduced-fat sour cream
Brown beef in a large heavy skillet over medium high heat until cooked through; breaking up into small bits as it cooks. Drain any fat remaining and set aside on a dish.
Add oil to the skillet; when hot, add onions and cook over medium heat until soft, 3 to 4 minutes. Add the diced tomatoes, tomato sauce, beans, chili powder, cumin, cayenne pepper and salt to taste. Mix well. Return cooked beef to the skillet, bring to a boil, then cover and simmer on low 1 1/2 to 2 hours. Serve with your favorite toppings.
