Recipe Remake: Berry Crumble

Berry delicious!
Fresh fruit crumbles are good any time of year, I tend to make them more often in the summer thanks to the abundance of berries. I suggest whipping them up with whatever berries you have around…blueberries, strawberries, blackberries, cherries or raspberries all work well! A mixture is always good, too. This recipe is sure to be as crowd-pleasing as it is healthful.

 

Berry Crumble


Serves 4
Prep Time: 10 minutes
Total Time: 30 minutes

 

2 cups fresh berries
½ cup oatmeal
2 tsp Smart Balance™ Fat Free Milk
1 tbsp melted Smart Balance® Buttery Spread
¼ tsp baking powder
1 tbsp sugar
Pinch of salt
¼ cup non-fat yogurt
1 tbsp brown sugar
1 tbsp finely chopped fresh mint

 

1. Preheat oven to 350°.

 

2. In a medium sized bowl, combine oatmeal, milk, spread, baking powder, sugar and salt. Mix until thoroughly combined.

 

3. Place berries in individual baking dishes or in a 9-inch baking pan. Crumble oatmeal topping on berries and bake for 20 minutes.

 

4. While crumble is baking, combine yogurt and brown sugar in a small bowl and set aside.

 

5. Serve right out of the oven or a room temperature. Top with yogurt and fresh mint before serving.
